    Having worked in many Italian kitchens in Europe and the UK, including London’s infamous River Cafe, Toby was asked by his friend Jamie Oliver to set up and run his new restaurant Fifteen in London.  After several years running the restaurant which trained underprivileged youth to become chefs, he returned to Australia in 2006 to set up Fifteen Melbourne.  The TV show Jamie’s Kitchen Australia chronicled the establishment of the restaurant. Toby was the ongoing executive chef at Fifteen Melbourne and is the author of best-selling cookbooks Daily Italian and Italian Local.
