Baked Apples stuffed with Fruitcake

Ingredients

 
  1. Apples
  2. Leftover fruitcake
  3. Sprinkling of cinnamon
  4. Dash of brandy (optional)
  5. Leftover custard
  6. Vanilla ice-cream

Method

Preheat oven to 180°C.

Core the apples from the top, making sure not to make a hole in the bottom.

Fill the apples with the leftover fruitcake.

Place apples in a baking dish on baking paper. Pour a little brandy over, if desired.

Sprinkle a little cinnamon on top.

Bake the apples at 180°C for 45min to 1hour, until the apples are as soft as you would like.

Pour custard over the top and serve with a dollop of vanilla ice-cream.
