    Ingredients

    • 1 whole fennel bulb cut into 12 wedges and grilled
    • 1 cup home made bread crumbs, use your day old bread
    • 1 lemon zest – the outer skin of the lemon finely sliced
    • 1 tablespoon capers
    • 2 teaspoon fresh chopped parsley
    • 2 tablespoons olive oil
    • salt and pepper

    Baked fennel

    On my drive to the café in the mornings I always notice the fennel growing wild by the side of the road, and in many parts of Victoria a declared weed.

    To do my bit for the eradication of these weeds I harvest them, seeds and all. You do have to be careful that council have not sprayed them before you pick them, so make sure you wash them thoroughly before using.

    Method

    Mix all ingredients, except fennel, together in a bowl and reserve.

    After grilling the fennel place in an oven proof dish, sprinkle bread crumb mix overt the top and bake for about 10 minutes, its that simple. Serve and enjoy.
