Cheesy Ham Filo Roll

Ingredients

 
  1. FILLING:
  2. 2 tablespoons olive oil
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 1 cup leftover cubed or mashed potatoes
  6. 1 cup leftover cubed cooked ham
  7. 1 cup leftover peas, or other leftover vegetables diced
  8. SAUCE:
  9. 1 tablespoon butter
  10. 1 tablespoon flour
  11. 1 cup milk
  12. ½ cup cheese
  13. PASTRY:
  14. 1/3 cup butter, melted
  15. 16 (9" x 14") sheets frozen filo dough, thawed

Method

Preheat oven to 180°C.

Cook onion and garlic in the olive oil until tender. Stir in ham, potatoes and vegetables. Set aside.

In a small pot make cheese sauce.  Melt butter in medium saucepan. Add flour to make a roux. Add milk and stir until sauce thickens.  Add cheese.  Pour cheese sauce over the filling mixture.

Place one filo sheet down and brush with melted butter. Repeat 7 times. Spread half the filling over one third of the filo stack leaving at least 2 centimetres at the borders.

Roll up the filo.  Place seam side down on greased tray.  Brush log with butter.  Pierce surface with knife 4 times.

Bake for 25 to 35 minutes until the rolls are browned and crisp. Rest for 10 minutes then slice.
