Gluten Free Croquettes

Ingredients

 
  1. Ham
  2. Gluten free crumbs made from rice or corn crackers
  3. Gluten free flour
  4. Butter
  5. Egg yolk
  6. Milk
  7. Stock cube
  8. Egg whites
  9. Olive oil

Method

Mince your ham, or cut in very small pieces.

Make gluten free crumbs with rice crackers or corn crackers, in blender or put in plastic bag and roll it with rolling pin very fine.

Make the sauce with gluten free flour, butter, egg yolk.

Mix the flour, with some milk and egg yolk to a smooth paste.

Put 1 and 1/2 cup of water with stock cubes, on stove, and mix in the paste and cook to a thick sauce.

Add the meat and make it to your taste.

Return to saucepan for thickening, take care that it does not boil.

Spread this mixture onto a shallow dish to cool and set.

When set cut in equal parts and form a firm cylinders.

Roll each one in the gluten free crumbs, then in a mixture of beaten egg whites and olive oil, then again in the crumbs followed again in egg mixture and then in the crumbs.

Deep fry in hot oil until golden brown.

Put on some absorbent paper.

Enjoy dipped in mustard or mayonnaise.
