    Ingredients

    • 8 egg whites
    • ½ tsp cream of tartar
    • 300g caster sugar
    • 2 tbsp cornflour
    • 2 tsp white vinegar
    • 100g flaked almonds
    • 300ml whipped cream
    • icing sugar, mango, berries and passionfruit

    Method

    Preheat oven to 140°C. Whisk the egg whites and cream of tartar to soft peaks in an electric mixer.

    Continue beating on medium speed while adding the caster sugar in a steady stream. Beat until thick and glossy, then fold in the cornflour and vinegar.

    Spread the meringue 2cm thick on a lined cookie tray and sprinkle with almonds. Bake for 20 minutes, until just set. Set aside, covered with a tea towel until cool.

    Cover the meringue with cream and fruit, then roll up. Serve with a dusting of icing sugar.

    Tips and Tricks

    • Choose mangoes that are firm when a small amount of pressure is applied to any part of the fruit. If the skin does not move under pressure, the mango is not ripe. To speed ripening, place in a brown paper bag and add a couple of apple slices to the bag.

    • While many fridges provide storage in the fridge door, this is in fact the warmest part of your fridge, as opening and closing alters the temperature. Eggs last longest when they’re in a stable cool environment, so best kept in the middle of your fridge.

    • We recommend purchasing free-range and organic eggs where possible to ensure the highest standards of animal welfare.
