    Katinka Day is a vegetarian who is also a part-time and aspiring vegan running a vegetarian and vegan food blog called The Thoughtful Eater. Aptly named, the blog gives readers an opportunity to think about the origin of the food they buy and consume, and introduces a lovely database of vegetarian and vegan dishes that are bound to impress even the most avid of meat eaters. Featuring healthy, wholesome and organic dishes that everyone will be able attempt at home, Katinka and her blog aims to diversify your palate and prompt you into thinking about what it means to eat ‘ethically’ and ‘sustainably’.

    Katinka’s meal plan is all about eating fun, exciting and wholesome meals that are flexible and easy to make. You’ll find that most of Katinka’s dishes on this weekly meal plan allows you to replace and swap some of the ingredients to suit your schedule and lifestyle so that it adds a personal touch to each dish you create. It’s all about thinking about the dishes you are making and becoming more engaged with the process of buying, cooking and eating food.
