    Ingredients

    • Fry’s chicken-style strips
    • 1 pizza base
    • olive oil, to brush the base
    • 2 tbsp onion marmalade
    • 8 button mushrooms, sliced
    • 8 cherry tomatoes, sliced
    • 1 tin artichokes, sliced
    • feta, crumbed (contains milk)
    • handful of rocket
    • 1 avocado, sliced

    Onion marmalade gourmet pizza

    Method

    Fry ‘chicken style’ strips and mushrooms in a little oil.

    Brush pizza base with olive oil and thinly spread with onion marmalade.

    Add artichokes, cherry tomatoes, sliced mushrooms and crumbed feta. Bake at 180°C for 20 minutes or until pizza is ready (personal preference).

    Garnish with avocado slices and rocket.

    Tips and Tricks

    • Stop leftover cut avocado going brown by sprinkling with lemon juice and wrapping tightly to store in the fridge for 1-2 days.

    • Store Mushrooms unwashed in a brown paper bag – the bag absorbs excess moisture and prevents the mushrooms from going soggy or mouldy.

    • Choose bright, firm flesh tomatoes – they should give a little when squeezed but not feel soft. Try to buy tomatoes that have been stored at room temperature as these will have a stronger flavour and will be slower to break down than those stored in the fridge.
