    • Ingredients

    • 2 slices good quality bread, such as sourdough or rye
    • 50g sliced ham
    • 50g sliced turkey
    • 100g sliced tomato
    • 2 lettuce leaves
    • 1 slice cheddar cheese
    • 1 tbsp mayonaise
    • 1 tbsp cranberry sauce or mustard

    Method

    •  Thinly slice turkey and ham off the bone, approximately 50 grams if each per sandwich.
    • Slice tomatoes and cheese, about half a tomato and 30 grams of cheese per sandwich.
    • Wash and pat dry lettuce leaves.
    • Lightly toast two slices of good quality bread such as sourdough or rye.
    • Layer the salad ingredients on the bread, starting with the lettuce leaves, then tomato and cheese slices. Then put the turkey, ham and mayonnaise on top.
    • OPTIONAL: spread the remaining slice with cranberry sauce or your favourite mustard.
    • This is going to be a tall sandwich so secure the filling with a toothpick on each side, then cut into triangles.

    Tips and Tricks

    • Use up those Christmas Day leftovers with this super easy club sandwich. Be sure to use good quality bread and accompany with a simple slaw, dressing and potato wedges on the side.

    • Keep basil in a glass of water, like a bouquet of flowers and store in your fridge wrapped in a plastic bag. Basil should last up to a week stored in this way. Remember to change the water regularly to prevent mould and decay.

    • Keep ham on the bone fresher for longer by putting it in a vinegar soaked ham bag or cotton pillow case. Soak the bag in a sink of cold, clean water with a dash of white vinegar through it. Wring the bag out thoroughly before use. Store ham at the bottom of the fridge on a plate.
