Ingredients
- 260g cream cheese
- 200ml buttermilk
- 200ml thickened cream
- 160g sugar
- 1 vanilla bean
- 36g gelatine leaf
- 120g pouring cream
- 200g digestive biscuits
- 225g unsalted butter
Vanilla cheesecake
Method
Combine the buttermilk, 200ml thickened cream, sugar and vanilla
Bring it to a simmer til the sugar dissolves. Whisk cream cheese until soft and then add the gelatine to the warm cream mixture
Whisk 120g pouring cream till you form soft peaks. Fold the cream through the cheese mixture and set over biscuits
Melt and brown the butter and combine in a bowl with the crushed biscuits. Serve with grilled strawberries and white peaches
