    Ingredients

    • 2 Fry’s Meat-Free Crumbed Schnitzel
    • 1 tbsp margarine
    • 1/4 onion, sliced
    • 2 tsp olive oil
    • 1 bread roll of your choice
    • 2 tsp oil of your choice
    • 50g wild mushrooms
    • 10g fresh rocket or lettuce
    • 1/2 avocado, slice into thin pieces

    Method

    Heat margarine in a thick based pan and fry onions until they start caramelising. Drain and keep aside.

    Add 1 teaspoon of olive oil to the pan, toast bread until golden brown and keep aside.

    Add 1 teaspoon of olive oil to that pan and sauté mushrooms. Drain and leave aside.

    Heat 2 teaspoons of oil and fry schnitzel until golden brown.

    Build your burger using the bread, onion, mushroom, schnitzel, fresh rocket or lettuce and avocado. Serve with a fresh side of your choice.

    Tips and Tricks

    • Leftover onions, especially cut, should be wrapped up securely or put in a sealed bag and stored in the vegetable crisper. They can also be frozen.

    • Store mushrooms unwashed in a brown paper bag – the bag absorbs excess moisture and prevents the mushrooms from going soggy or mouldy.

    • Stop leftover cut avocado going brown by sprinkling with lemon juice and wrapping tightly to store in the fridge for 1-2 days.
