Ingredients
- 2 Fry’s Meat-Free Crumbed Schnitzel
- 1 tbsp margarine
- 1/4 onion, sliced
- 2 tsp olive oil
- 1 bread roll of your choice
- 2 tsp oil of your choice
- 50g wild mushrooms
- 10g fresh rocket or lettuce
- 1/2 avocado, slice into thin pieces
Meat-free schnitzel burger with mushrooms, caramalised onions and avocado
Method
Heat margarine in a thick based pan and fry onions until they start caramelising. Drain and keep aside.
Add 1 teaspoon of olive oil to the pan, toast bread until golden brown and keep aside.
Add 1 teaspoon of olive oil to that pan and sauté mushrooms. Drain and leave aside.
Heat 2 teaspoons of oil and fry schnitzel until golden brown.
Build your burger using the bread, onion, mushroom, schnitzel, fresh rocket or lettuce and avocado. Serve with a fresh side of your choice.
Tips and Tricks
Leftover onions, especially cut, should be wrapped up securely or put in a sealed bag and stored in the vegetable crisper. They can also be frozen.
Store mushrooms unwashed in a brown paper bag – the bag absorbs excess moisture and prevents the mushrooms from going soggy or mouldy.
Stop leftover cut avocado going brown by sprinkling with lemon juice and wrapping tightly to store in the fridge for 1-2 days.
