Ingredients
- 1 box Fry’s Family chunky strips
- 2 pkts rocket leaves
- 2 cups flat leaf parsley
- 1 medium red onion (sliced into rings)
- 100g parmesan cheese (shaved)
- balsamic vinegar
- olive oil
Warm fresh rocket salad
Method
Fry the onion rings until softened in a little oil, set aside and keep warm.
Fry ‘Chunky Strips’ in a little oil for 6-8 minutes, set aside and keep warm.
To assemble the dish, place the rocket and parsley in a bowl and dress with the olive oil and balsamic vinegar. Place a handful of ‘Chunky Strips’ and onion rings on top.
Repeat the process to create a second layer.
Garnish with shaved Parmesan. Serve with warmed Ciabatta bread.
Tips and Tricks
Hard cheeses store excellently in the freezer. Grate fully and keep in a sealed plastic bag – cheese can be used in cooking straight from frozen.
Keep parsley in a glass of water and wrapped in a plastic bag in your fridge. Parsley should last a week or so stored in this way. Change the water regularly to prevent mould and decay.
Growing your own parsley is also a great way to avoid waste and ensure you have a constant supply of fresh herbs.
